Tropical Cloud
Here’s something that’s really simple to make and is sure to please just about anyone! But you will need a pretty solid blender that can crush ice easily to make this drink. I think mine is shot. Its about three or four years old and it just doesn’t blend iced drinks as efficiently as it used to. Probably time to scout for a new one soon.
Ingredients:
- 15ml Bacardi 8 Rum
- 15ml Frangelico (a hazelnut liqueur)
- 30ml Kahlua
- 30ml Baileys
- 1 scoop chocolate-rippled vanilla ice-cream
- 1 piece of banana about a finger’s length
Method:
- Put all ingredients in a blender with a half-glass of ice and pulse it until its smooth and slushy.
- Pour it into a chilled glass and garnish with grated chocolate.
- If you’re new to bartending, check out the basics in The Bartender’s Handbook.

You can experiment with just about any ice-cream you want, I reckon it will still taste pretty nice. You can add more rum if you like to spike up the alcohol content, but it will make the drink more watery. It also makes a lovely light dessert and its perfect for the beach! If you can find a place to plug in a blender there….
Cheers!
